You may be surprised to find cereal in your poon choy – but have you ever considered your reaction if you found B. cereus among your abalone and pigskin? |

Bacillus cereus is commonly found in soil, cereal crops and vegetables. Indeed soil often contains 1,000 to 100,000 spores per gram! Therefore B. cereus often hides in raw fruits and herbs. These spores are able to resist heat and survive average cooking temperatures, and can only be killed when sustained in temperatures below 10 degrees Celsius. Otherwise, the spores produce toxins that induce vomiting and diarrhea. |
